Turkey Chili Over Cauliflower Rice - Truth be told, I got lazy and threw the cauliflower chunks in the crockpot instead of making the "rice" and it was just as good and much easier. :) I topped this with raw scallions and Daiya cheddar cheese. Yes, this tapioca cheese is more processed but dairy free is the way to be.
BBQ Brisket, Mashed Cauliflower Potatoes and Collard Greens - Always squeeze lemon on your greens! The vitamin C in the lemon helps to make the iron in your greens more absorbable. Squeeze at the end of cooking so you don't kill the enzymes of the lemon with heat. As for the brisket, I throw it in the crockpot with a little bone broth, onions, salt and pep and then I add BBQ sauce at the end. Try this BBQ sauce by Tessamae. It's sweetened with dates!
Chicken Piccata with Sautéed Brocollini - Make sure the skin is crispy on these guys, it makes the meal! No one wants to have nor wants to eat mushy chicken skin.
Chicken Soup for the Soul - I pretended the potatoes were matzah balls. Happy Chanukah!
