Avocado Egg Salad

Ingredients
5 hard-boiled eggs
3/4 large avocado, diced
1/2 cup celery, diced
1-2 tbsp spicy or Dijon mustard
1/2 tsp curry powder
sea salt, to taste
black pepper, to taste
dried cranberries, for garnish (optional)
walnuts, toasted and chopped, for garnish (optional)

Directions
Allow eggs to cool. Chop into small pieces. Combine all ingredients and fold/stir to incorporate. Season as needed.
