Ingredients
1/2 medium butternut squash, cut into 1/4-inch thick and 2-inch long pieces
1/2 tbsp ghee
1/4 lb mild Italian sausage, casing removed
1/4 lb hot Italian sausage, casing removed
1/2 small onion, diced
2 cloves garlic, minced
1 14oz can whole tomatoes
1/4 cup coconut milk (canned)
1/2 tbsp oregano
1 tsp thyme
1 tbsp fresh basil, chopped
sea salt, to taste
black pepper, to taste

Directions
Preheat oven to 350 degrees. In a baking dish, evenly spread the butternut squash. In a large soup pot, heat the ghee over medium heat and crumble in the sausage. Add the onion and cook together until the sausage is browned. Add the garlic and cook for another minute or two. Add the tomatoes and bring to a simmer, breaking up the tomatoes with a spoon. Add the coconut milk, oregano, thyme, and basil, and season with salt and pepper. Stir well and bring to a simmer for another 5 to 7 minutes. Pour the sauce evenly over the butternut squash. Bake uncovered for 40 to 45 minutes or until the squash is fork tender.
