Banana Crepes

Banana Crepes

1/2 cup egg whites
1 banana
2 tablespoons arrowroot powder
1 tablespoon coconut flour
1/2 teaspoon vanilla extract (optional)

Combine all ingredients in a blender and mix together until the batter is a smooth, thin consistency. Heat up a non-stick skillet on high heat and let it get hot for about 1-2 minutes. Then turn to medium heat and start making your crepes. After you pour some of the batter, circle the skillet around to spread the batter out very thin. Let it cook most of the way through (about 2 minutes) then flip and let cook for about 30 more seconds. Fill and top with your choice of berries and nut butter.
