Beet Brownies

Beets? In a dessert? Who knew! We promise you won't be disappointed!

2 1/2 cups red beets, grated
1/2 cup raw, local honey
1/2 cup cacao powder
1 tsp cinnamon
1/2 tsp sea salt
1/2 cup ghee, melted
4 eggs
1 cup fresh berries, chopped
3 tbsp filtered water

In a large saucepan, heat the beets, honey and 3 tbsp water. Bring to a boil, cover and reduce the heat to let it simmer for 30 minutes. Process the beet mixture in a blender until smooth then let cool. Beat in the eggs, cacao powder, cinnamon, berries, salt and ghee. Stir well until thoroughly combined. Pour into an 8x8 inch greased or lined baking tin. Bake at 375 for 30 mins. Let cool.
