Black Bean Soup

This recipe requires some ingredients to be prepped the day before.

1 1/2 tsp red wine vinegar
1/4 tsp black pepper
1/4 tsp oregano
1 tsp cumin
1 tbsp chili powder
1 14oz can diced tomatoes
1/8 cup lentils
1 small jalapeno, seeds removed, chopped
1 medium green bell pepper, diced
3 cloves garlic, crushed
1 large red onion, diced
1 stalk celery, diced
1 medium carrot, diced
4 cups spinach
3/4 qt filtered water
1/2 lb dried black beans (soaked overnight)
1/2 tbsp sea salt
1/4 cup uncooked brown rice
1 medium lime, cut into wedges
cilantro, chopped

Add all ingredients (except for the rice and spinach) to the crockpot. Cover and cook for 3 hours. Add rice and spinach and cook for 20 more minutes. Serve with desired toppings.
