Braised Short Ribs

Braised Short Ribs Braised Short Ribs (shown with roasted green beans and Brussels sprouts)

4 grassfed beef short ribs
black pepper, to taste
1 14oz can fire roasted diced tomatoes
1 package button mushrooms, sliced
1 medium onion, diced
4 cloves garlic, peeled
2 bay leaves
1 container Brussels sprouts, trimmed, halved and roasted
1 package green beans, trimmed and roasted

Sprinkle ribs with sea salt and pepper. Heat a large pan over medium-high heat and sear the ribs on all sides. Place in an even layer in a crockpot. Add the diced tomatoes, mushrooms, onions, garlic and bay leaves. Cover and cook on low heat until the meat is tender, about 6 to 8 hours. Serve with roasted Brussels and green beans.
