Breakfast Bowl

Ingredients
1 tsp ghee
2 eggs, lightly beaten
1/2 cup broccoli
1 cup kale, deveined
1/2 cup cooked quinoa
1 tbsp coconut aminos
1/4 avocado, diced
1 tbsp pepitas, toasted
1 tbsp sprouts

Directions
Heat ghee in a small skillet. Add eggs and cook moving around the pan until scrambled. Meanwhile blanch or steam broccoli and kale until heated through. Place quinoa, broccoli and kale in a serving bowl. Top with scrambled egg, avocado, pepitas, and salad sprouts. Drizzle with coconut aminos.
