Buffalo Chicken Quinoa Bites with Creamy Sauce

1 cup cooked quinoa
1 cup shredded chicken
1/4 cup goat cheese
1/4 cup Daiya cheddar cheese
1/4 cup buffalo sauce
1/4 cup gluten free panko
1 egg
2 tbsp almond flour
1 cup goat yogurt
1/4 cup Daiya mozzarella cheese
1/2 tsp garlic powder
1/2 tsp dried dill
1/2 tsp dried parsley
1/2 tsp black pepper

In a small bowl, combine goat yogurt, Daiya mozzarella cheese, garlic powder, dill, parsley, pepper; set aside in the refrigerator. Preheat oven to 350 degrees. Lightly drizzle coconut oil over a mini muffin pan. In a large bowl, combine quinoa, chicken, goat cheese, Daiya cheddar, buffalo sauce, gluten free panko crumbs, egg, almond flour, and pepper. Using a small cookie scoop, scoop the mixture evenly into the muffin tray, about 1 1/2 tablespoons for each. Place into oven and bake for 18-20 minutes, or until golden and set. Serve with creamy sauce and your favorite veggies!
