Burgers and Fries

1 large sweet potato, cut into fries
1-3 tbsp avocado oil
1/2 lb grassfed ground beef (can sub ground turkey or bison)
1/2 package mushrooms, sliced
2 handfuls spinach
1/2 medium tomato, sliced
1/2 medium onion, diced
1/2 medium bell pepper, diced
1/2 medium avocado, sliced
1 handful fresh basil, chopped
sea salt, to taste
black pepper, to taste
1 tbsp ghee

Preheat oven to 400 degrees (could also use the broiler if you want extra crispy fries).
Line a baking sheet with parchment paper.
Brush fries with avocado oil and sea salt and pepper.
Arrange in a single layer on baking sheet.
Bake (or broil) until tender (time varies; check often).

In a large bowl, mix meat with onion, bell pepper, basil, salt and pepper, and your favorite spices.
Form into patties.
Grill (or saute') until the desired temperature is reached.
Saute' mushrooms in ghee until tender.
Top burgers with tomato, avocado, and mushrooms and serve over a bed of spinach.
