Carrot Ginger Dressing

2 large carrots, chopped
2 large shallots, peeled and chopped
1/4 cup fresh ginger, peeled and chopped
2 tbsp sweet white miso
1/4 tbsp rice wine vinegar
2 tbsp toasted sesame oil
1/2 cup extra virgin olive oil
1/4 cup filtered water
1/2 tsp sea salt
1/2 tsp black pepper

Puree all the dressing ingredients together into a powerful blender until absolutely smooth.
