Cashew “Sour Cream”

Whole Foods Market

2 cups cashews, soaked in water for 1-4 hours and drained
1 tbsp apple cider vinegar
2 tbsp lemon juice
1-2 tbsp dried chives
filtered water, to thin

Remove and discard any herb stems. Place all the ingredients in a blender, and blend on high until smooth, adding water to thin as needed.
