2 cups cauliflower florets
3 eggs
1 tsp dried basil
1 tsp dried oregano
1/2 tsp garlic powder
sea salt, to taste
black pepper, to taste
1 tbsp coconut oil

Preheat the oven to 400 degrees. Brush the cauliflower florets with coconut oil and roast until tender (25 to 30 minutes). Remove from the oven. In a large bowl, mix together all ingredients and mash with a potato masher (It's okay if it's a little lumpy). Heat the coconut oil over medium-high heat. Place a small amount of "batter" onto the pan and cook like a pancake. Don't flip too early or they might fall apart!
