Ceviche

Ingredients
1/2 lb white sea bass or other firm fish, cut into 1/2-inch pieces
1/2 cup fresh lime juice
1 medium red bell pepper, finely chopped
1/2 medium onion, finely chopped
1 handful cilantro, chopped
1/2 cup club soda
sea salt, to taste
black pepper, to taste
1/2 medium avocado, sliced
1/2 medium red bell pepper, thinly sliced
1/2 medium cucumber, sliced
1/4 head lettuce, chopped

Directions
Combine all ingredients in a large glass bowl, cover tightly with plastic wrap, and allow the fish to “cook” in the marinade for at least 30 minutes (tastes best after at least 6 to 8 hours). Serve with on a bed of lettuce with sliced avocado, bell pepper strips and cucumber slices.
