Chicken Makhani

1 lb chicken thigh
1 medium onion, diced
4 cloves garlic, minced
1/2 tbsp ground cardamom
2 tsp curry powder
1/8 tsp cayenne pepper
2 tsp garam masala
1 pinch ground ginger
1/2 14.5oz can coconut milk
1 6oz can tomato paste
2 tbsp lemon juice
2 handfuls greens (spinach, chard, kale, etc.)

Place all ingredients, except the greens, in the crockpot. Cook on low for 8 hours or on high for 4-5 hours. Add greens during the last 30 minutes of cook time. Use two forks to shred the chicken and serve!
