Chocolate Almond Banana Bites

No bake and highly delicious!

2 cups walnuts
2 cups dates
2 tsp vanilla extract
8 tsp raw cacao powder
2 dashes sea salt
2 tsp coconut oil, melted
2 tsp unsweetened coconut flakes
1 1/2 cup almond butter
4 1/2 medium bananas
3 tsp vanilla extract
2/3 tsp sea salt
2/3 cup coconut oil, melted

To make the crust: Add dates to food processor and process until very crumbly. Add walnuts, vanilla, cacao, salt, coconut flakes and coconut oil and process until the mixture is thoroughly blended, then transfer to a 9x13 inch glass dish. Using a piece of wax paper or parchment paper (or your fingers!) smash mixture into pan and refrigerate until ready to use. To make the filling: Blend almond butter, bananas, vanilla extract, sea salt and coconut oil together very, very well. Pour into prepared piecrust and freeze until firm. Remove from freezer, thaw slightly and cut into small squares. Serve or re-freeze squares on a cookie sheet. Once re-frozen, they can be stored and make convenient little bite-sized sweet treats!
