Chocolate & Coconut Mug Cake

We love these mug cakes because they only make one serving. Once you eat it, it's gone for good!

Ingredients
1/4 cup almond flour
1/4 tsp baking powder
2 tbsp unsweetened shredded coconut
1 tbsp raw cacao powder
1 egg, lightly beaten
1 pinch Stevia granules
2 tbsp coconut milk

Directions
Preheat oven (option to use a toaster oven) to 350 degrees. Add all ingredients to a mug and mix with a spoon. Bake for 15 to 25 minutes until desired consistency is reached. NOTE: mug will be very hot! Variations: Carrot Cake - replace coconut and cacao with 1/4 cup grated carrot. Add a sprinkle of cinnamon, cardamom, ginger and a tbsp of walnuts. Chocolate and Raspberry - omit coconut and add one tbsp of frozen raspberries
