Cranberry Avocado Salad

Ingredients
1 bunch mixed greens, spinach or arugula
1 large avocado, sliced
1/2 cup dried cranberries
1/2 cup roasted almonds
FOR THE DRESSING:
1/2 cup extra virgin olive oil
1 tbsp poppy seeds
1/2 tsp paprika
1 tsp dried mustard
1 tbsp minced sweet onion
1/8 cup white balsamic vinegar
sea salt, to taste
black pepper, to taste

Directions
In a bowl, combine all the ingredients for the dressing, season to taste, and stir well. Place the greens in a large bowl. Add the avocado and dried cranberries. Pour ΒΌ cup of the dressing over the salad and toss gently. Scatter the almonds over the salad. Serve with some extra dressing.
