Cranberry Pistachio Pancakes

So good you don't even need syrup!

Ingredients
1/2 medium banana
1/2 cup dry rolled oats
2 egg whites
1 tsp cinnamon
1 tsp vanilla extract
3 tbsp dried cranberries
3 tbsp pistachios
1 tbsp cacao nibs
1 tbsp coconut oil, melted

Directions
Heat oil in a large pan over medium heat. Combine all other ingredients and stir until combined. (can also process the banana, oats and egg whites in a blender first, then add the remaining ingredients). Pour batter onto pan and brown on both sides.
