Cucumber Noodle Salad with Strawberry Vinaigrette Cucumber Noodle Salad with Strawberry Vinaigrette

Ingredients
1 large cucumber
8 strawberries, tops removed and quartered
2 tbsp balsamic vinegar
1 tbsp extra virgin olive oil
1 tbsp Dijon mustard
1 pinch sea salt
black pepper, to taste
1 medium lemon

Directions
Use a spiral slicer or Vegetti to make the cucumber noodles, set them aside in a large bowl with a paper towel at the bottom. Use a food processor to puree the strawberries, balsamic, olive oil, mustard and spices. Remove the paper towel from the bottom of the bowl of cucumber noodles. Cut the lemon in half, add the juice from one half to the bowl of cucumber noodles. Toss well. Plate cucumber noodles in small bowls, add a few tablespoons of the vinaigrette on top, garnish with lemon slices.
