Cucumber Papaya Salad

1 head radicchio, roughly chopped
4 cups spinach
1 1/2 cups papaya, peeled, seeded and sliced into 1-inch slices
1 medium cucumber, thinly sliced
1 medium banana, cut into 1/2-inch slices
1 cup pineapple, diced
2 tbsp sunflower seeds, toasted
1/4 cup lime juice
2 tbsp lime juice
1/4 cup rice vinegar
2 tbsp fresh ginger, minced
2 scallions, thinly sliced
2 tbsp cilantro, chopped
1/4 tsp Vietnamese style chili sauce
1 pinch brown sugar

To make the dressing, lime juice, rice vinegar, ginger, scallions, cilantro, chili sauce and brown sugar in a small bowl, whisk well, cover and refrigerate. To assemble the salad, toss the radicchio and spinach together and set aside. Put the papaya, cucumber, banana and pineapple in a mixing bowl. Add the dressing and toss gently until combined. Arrange the salad greens on a plate and spoon the fruit over them. Sprinkle with toasted seeds.
