Curried Okra with Tomato and Onion

Curried Okra with Tomato and Onion

2 cups okra, sliced into rounds
1/2 medium red onion, sliced
1 cup cherry tomatoes, halved
1 1/2 tsp curry powder
1/2 tsp garam masala
1 clove garlic, minced
sea salt, to taste
black pepper, to taste
1 tbsp coconut oil

Put oil in bottom of large sautee pan and heat to medium. Once hot, add sliced onion garlic and okra. Saute’ ingredients until onions start to turn clear and then add the tomatoes and spices (incl. salt and pepper). Mix well, cover, and let simmer for 5min. Remove cover and stir often until okra is cooked through and ingredients are soft. Remove from heat and serve. Periodically taste the mixture and add more curry powder or other similar spices to enhance flavor as you like it.
