Ingredients
4 eggs
1 tbsp fresh minced chives
sea salt, to taste
1/4 cup coconut flour
1/2 tsp baking soda
1 cup frozen spinach, thawed and squeezed dry
2/3 cup diced ham
1/2 tsp apple cider vinegar
black pepper, to taste
1 tbsp ghee
guacamole (optional)
salsa (optional)

Directions
Whisk the eggs in a bowl and add sea salt, coconut flour and baking soda. Next, add the spinach, ham and apple cider vinegar and stir to combine. Heat the ghee in a large skillet over medium heat. Add batter to the pan (about 3 tbsp at a time) and flatten the "pancake" with the back of a spatula. Saute for two minutes, then flip and cook for one minute. Place the pancakes on a wire rack to cool. Option: top with guacamole and/or salsa.
