Ginger Lime Halibut

Ginger Lime Halibut

2 6oz fillets halibut (or other white fish such as cod or tilapia)
sea salt, to taste
1 medium lime
1/4 cup red onion, sliced
1 tsp ginger, grated
2 tbsp cilantro, chopped
1 tbsp ghee

Season halibut with salt and squeeze juice of 1/2 lime over the filet in a small bowl. Coat the top of the filet with the garlic and grated fresh ginger and allow this to marinate the fish for 10 minutes. Put a small amount of ghee in a saute pan and place the fish, ginger side up, in the pan. Saute until cooked through, periodically squeezing the other 1/2 lime over the top of the fish to keep it moist. When the fish is almost done, add the red onion slices to the pan and moderately saute them so that they maintain a little crunch. Once fish is cooked, scatter the onion on top and if you prefer, add a little bit of chopped cilantro for freshness. Serve with your favorite veggie.
