Ginger Scallion Noodle Sauce

2 1/2 cup thinly sliced scallions (greens and whites from 1-2 large bunches)
1/2 cup finely minced fresh peeled ginger
1/4 cup grapeseed oil
1 1/5 tsp. coconut aminos
3/4 tsp. apple cider vinegar
3/4 tsp. sea salt

Mix together the scallions, ginger, grapeseed oil, coconut aminos, apple cider vinegar, and salt in a bowl. Though it's best after 15 or 20 minutes of sitting, ginger scallion sauce is good from the minute it's stirred together up to a day or two in the fridge. Use with your favorite stir fry or veggies! Add a little egg or meat for protein.
