Gluten free Lemon Chia Blueberry Muffins

Ingredients
1 1/4 cup Pamela's pancake mix
1/4 cup coconut oil (melted)
1/2 cup coconut sugar
1/2 cup coconut, almond or cashew milk
1 teaspoon organic lemon extract
1/8 cup chia seeds
1/2 cup organic blueberries
1 whole egg

Directions
Mix in a blender. First add egg, oil, and milk, then add the dry ingredients. Blend everything together (except berries). Last, fold the berries in before spooning into a muffin tin. Bake @350 for approximately 15 mins or until a toothpick comes out dry. enjoy!
