Greek Cucumber Noodles

Greek Cucumber Noodles

Ingredients
3 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tbsp lemon juice
1 tbsp dried oregano
1/4 tsp sea salt
1 large cucumber, spiralized
1/2 cup olives, cut into thirds
1/2 cup tomatoes, diced
1/3 cup red onion, finely chopped
1 medium avocado, pitted and diced
1 cup spinach, chopped

Directions
Start with the olive oil, balsamic vinegar, and lemon juice in a separate bowl. Whisk those ingredients together quickly for 30 seconds until contents aren’t separating from each other. (This step can also be done in the food processor.) Add the minced garlic, oregano, and salt to the dressing. Let the dressing sit for a few minutes, letting all the flavors fuse together. You may want to return to the bowl at least once to whisk the ingredients together. Place all ingredients, including the dressing, in the large bowl with the noodles. Mix and serve!
