1/2 lb chorizo sausage, casing removed
1/2 medium onion, diced
1 6oz can diced green chiles
1/2 head cauliflower, cut into florets
2 cups fresh spinach
1/4 tsp garlic powder
2 eggs, whisked
sea salt, to taste
black pepper, to taste
2 green onions, diced

Preheat oven to 375 degrees. Place a pan over medium heat. Add chorizo and yellow onion and saute' until the meat is fully cooked through. Add diced chiles and spinach and mix well. Continue to cook until the spinach is wilted. Remove from heat and add to a large bowl. Using a food processor, puree cauliflower into a rice-like texture. Place the cauliflower rice in the bowl with the meat mixture. Add garlic powder, whisked eggs, sea salt, and pepper, and mix together. Add the mixture to a greased 8x8 glass baking dish and place in the oven. Bake for 45 minutes. Remove from the oven and let rest for 5 minutes. Top with diced green onions.
