Grilled Romaine Salad

2 romaine hearts
1 tbsp ghee, melted
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar or fresh lemon juice
1/2 medium red onion, sliced
your favorite salad toppers

Light your grill. Slice each romaine heart down the center and rub 1 tbsp of melted ghee into each of the cut sides. Place the hearts cut side down on your grill, and grill until charred (about two minutes). Remove from grill, chop the lettuce, and add to a medium sized serving bowl. Top the lettuce with the red onion and any other salad ingredients you like, toss with the vinegar and 2 tbsp olive oil and enjoy!
