Grilled Salmon with Tomato and Basil

Grilled Salmon with Tomato and Basil

Ingredients
2 6oz fillets salmon, wild caught
1 clove garlic, minced
1/2 tsp sea salt
1/2 tbsp ghee, melted
1/3 cup fresh basil
1/4 cup fresh basil
1 medium tomato, thinly sliced
1/8 tsp black pepper

Directions
Put garlic, salt and oil in a small bowl and and stir. Measure out a piece of parchment paper large enough for the salmon fillet. Coat the parchment with cooking spray. Place the salmon skin-side down on the parchment and spread the garlic mixture all over it. Sprinkle with 1/3 cup basil. Overlap tomato slices on top and sprinkle with the remaining 1/4 tsp salt and pepper. Transfer the salmon on the parchment to the grill. Grill until the fish flakes easily, 10 to 12 minutes. Use two large spatulas to slide the salmon from the parchment to a serving platter. Serve the salmon sprinkled with the remaining 1/4 cup basil. OPTION: Bake the salmon (in a dish covered with foil) in a 350 degree oven for 30 to 40 minutes. As ovens and oven temperatures vary, you may want to check often. Serve with your favorite grilled or roasted vegetable.
