Healthy Vegetarian Pizza with Soft-Baked Eggs

Healthy Vegetarian Pizza with Soft-Baked Eggs

This pizza is gluten-free, light on the dairy, loaded with organic vegetables. But here’s the best part: it’s topped with deliciously runny pasture-raised eggs from Vital Farms. Not only does that velvety yolk tie in all the flavors together, but pasture-raised eggs provide more complete protein, vitamins and minerals to your plate than cage-free eggs. Think more vitamin A, vitamin E, and omega-3's in your eggs thanks to the hens eating a diet natural to them! It's not just what we eat, it's what our foods eat too. 1 whole gluten-free pizza crust
3-4 whole Vital Farms eggs
1 package organic Brussels sprouts (finely chopped and pan seared)
1/4 of organic red onion
1-2 cloves garlic
1 jar organic tomato sauce
1-2 tablespoons organic feta cheese (optional)
2-3 tablespoons organic extra virgin olive oil
2-3 tablespoons salt, pepper, oregano, garlic powder and crushed red pepper (to taste)

1. Preheat the oven based on the directions for your gluten-free pizza crust. Put it in the oven and take it out before it browns - it's going back in at the end!
2. Pan sear your onions, garlic, and Brussels sprouts in olive oil on medium heat until Brussels sprouts are tender.
3. Top the pizza with the sauce, vegetables, seasonings, and feta (optional).
4. Crack Vital Farms eggs on top of the pizza.
5. Put pizza in oven for 350 degrees until eggs are cooked and crust is brown (10-15 minutes).
