Holiday Stuffing Bread

Tastes just like mom's stuffing!

1 tbsp ghee or coconut oil
1 small onion, chopped
2 stalks celery, diced
1/2 cup walnuts
1 1/2 cup almond flour
1/2 cup coconut flour
1 tsp baking soda
1/4 tsp sea salt
10-11 sage leaves, chopped
1 tbsp rosemary, chopped
1 pinch ground nutmeg
4 eggs or flax eggs (4 TBSP flax meal + 10 TBSP of water)
1/2 cup chicken or vegetable broth
2-3 pieces bacon, cooked and crumbled (omit if making it vegan)

Preheat oven to 350 degrees.
If using flax eggs, combine the flax meal and water and set aside for 10 minutes.
Add ghee or coconut oil to a pan on medium heat.
Saute' onion and celery for five minutes.
Add walnuts and saute' for two to three minutes. Set aside.
In a bowl, combine all dry ingredients and herbs and mix well.
Add the sauteed onion mixture, then add the wet ingredients and combine.
If using, mix in the bacon last.
Spread the batter into a loaf pan.
Bake for 35 minutes or until toothpick comes out clean.
