Indian Rice Salad

1/2 cup brown basmati rice
2 medium onions, chopped
2 stalks celery, diced
1 medium cucumber, diced
1/2 cup cilantro, chopped
1/2 cup mint leaves, chopped
1/4 cup cashews, roasted and chopped

Cook rice according to package directions. Drain and allow to cool. Meanwhile, combine cooled rice, onion, celery, cucumber, coriander, mint and cashews.
