Jicama Cabbage Chipotle Slaw Jicama Cabbage Chipotle Slaw

2 tbsp lime juice
1/2 medium lime, cut into wedges
1 1/2 tsp minced canned chipotle chiles in adobo sauce
1 1/4 tsp cumin
4 cups red cabbage, thinly sliced
2 cups jicama, peeled and cut into matchsticks
1/2 cup cilantro
1 tbsp cilantro
1/4 cup pumpkin seeds

Whisk 2 tablespoons lime juice, chipotles, and cumin in large bowl to blend. Add cabbage, jicama, and 1/2 cup cilantro to chipotle dressing and toss to coat, adding more lime juice, if desired. Season with sea salt and pepper, sprinkle with pepitas, and serve with lime wedges and top with remaining cilantro.
