Mexican Shrimp Cobb Salad

Skinny Taste

1/2 lb shrimp, peeled and deveined
chipotle chili powder, to taste
1/2 tbsp lime juice
sea salt, to taste
3 cups cabbage, shredded
1/2 can black beans, drained and rinsed
1 tbsp red onion, diced and divided
1 tbsp cilantro, chopped
1/2 medium lime, juiced
1/2 medium cucumber, diced
1 cup tomato, diced
1/2 medium avocado, diced

Rinse shrimp and chop into large chunks. Toss shrimp with a little salt, chipotle chili pepper, and fresh lime juice. Combine drained beans, red onion, cilantro, lime juice and salt to taste. In a glass trifle dish or clear bowl, layer salad ingredients starting with the lettuce, black bean mixture, cucumber, tomatoes, avocado and shrimp on top.
