1 1/2 cups Pamela's Gluten Free Baking & Pancake Mix
3/4 cup water
1 tbsp coconut oil
2 large handfuls fresh kale (or spinach)
1/2 cup diced pineapple chunks
Combine all of the ingredients in a blender and pulse until completely combined. Grease waffle maker with coconut oil and pour batter in the center. Cook until steam stops rising from the edges. If you don't own a waffle maker, you can easily make these into delicious pancakes using one cup of mix and one egg.
