Poached Salmon with Mustard Sauce

Ingredients
1/3 cup vegetable broth
2 tbsp rice wine vinegar
1 green onion, chopped
2 6oz fillets salmon, wild caught
1/4 cup unsweetened almond milk
1 tsp ghee
2 tsp Dijon mustard

Directions
Bring broth, vinegar and onion to simmer in heavy large skillet. Add fish, cover and simmer until fish is just cooked through, about 8 minutes. Transfer fish to plates. Tent with foil to keep warm. Add almond milk ad ghee to skillet and bring to boil. Boil until reduced to sauce consistency, stirring occasionally, about 2 minutes. Mix in mustard. Spoon sauce over fish.
