Three ingredients and only five minutes of prep!
10 oz dark chocolate chips (at least 70% dark)
1 cup unsweetened coconut flakes
3/4 cup pomegranate seeds
Run the coconut flakes through a food processor until super fine. Melt chocolate in a double boiler. Mix together the coconut and chocolate and spread out on to 1/4-1/8 inch thick on a baking sheet lined with parchment paper. Sprinkle the pomegranate seeds on top. Freeze for 1+ hours or until hard. Break into pieces and serve immediately.
