Pumpkin Bars

Tastes just like pumpkin pie!

1 tbsp coconut oil or ghee, melted
1/2 cup canned pumpkin puree
1/2 cup almond butter
1/3 cup raw, local honey or maple syrup
2 eggs or flax egg (2 tbsp ground flaxseed + 5 tbsp water)
2 tsp pumpkin pie spice
1 tsp vanilla extract
1/4 tsp sea salt
1/2 tsp baking soda
1 tsp cinnamon
1/4 cup walnuts or pecans, chopped

Preheat oven to 350 degrees and grease an 8x8 inch pan generously with coconut oil or ghee.
If using flax eggs, combine the flax meal and water and set aside for 10 minutes.
Combine all of the ingredients (excluding nuts) in a medium bowl, and mix well until smooth batter forms.
Transfer the batter to the greased pan, and bake for 20 to 25 minutes, or until the edges are golden brown and the center is firm.
Top with 1/4 cup chopped pecans or walnuts.
Allow to cool completely in the pan.
Cut and serve!
