Pumpkin Chicken Sausage with Zucchini Noodles
1/2 tbsp coconut oil
3 links Applegate Farms Chicken and Apple Sausage
3 cups spinach
1/2 medium onion, diced
crushed red pepper, to taste
1/8 tsp garlic powder
cayenne pepper, to taste
1/2 cup canned pumpkin
1/4 cup coconut milk (canned)
1/8 cup chicken broth
1/4 cup cilantro, chopped
sea salt, to taste
2 medium zucchini, spiralized into noodles
Chop the sausage.
Heat a pan on medium-high heat, add 1/2 tablespoon coconut oil.
Add the onion, chicken apple sausage, spinach, garlic powder, crushed red pepper, and cayenne pepper. Heat through.
Mix the pumpkin, coconut milk, and broth in a small bowl.
Add mixture to the pan. Heat until simmering.
Add the cilantro, salt and pepper. If you want more heat, add some more crushed red pepper or cayenne!
Feel free to add more pumpkin, coconut milk and/or broth until your desired consistency is reached.
In a separate small pan, add the remaining 1/2 teaspoon coconut oil, cook 30 seconds then add the zucchini noodles and sauté 1 1/2 minutes.
Dish up the zucchini noodles and pour the sauce over top.
Garnish with a little extra fresh cilantro.
