Pumpkin Chicken Sausage with Zucchini Noodles Pumpkin Chicken Sausage with Zucchini Noodles

1/2 cup canned pumpkin
3 links Applegate Farms Chicken and Apple Sausage
3 cups spinach
1/2 medium onion, diced
1/4 cup coconut milk (canned)
1/8 cup chicken broth
1/8 tsp garlic powder
1/4 cup cilantro, chopped
2 medium zucchini, spiralized into noodles
1/2 tbsp coconut oil
crushed red pepper, to taste
cayenne pepper, to taste
sea salt, to taste

Chop the sausage. Heat a pan on medium high heat, add 1/2 tablespoon coconut oil then add the onion, chicken apple sausage, spinach, garlic powder, crushed red pepper, and cayenne pepper. Heat through. Mix the pumpkin, coconut milk, and broth in a small bowl. Add mixture to the pan. Heat until simmering. Add the cilantro, salt and pepper. If you want more heat, add some more crushed red pepper or cayenne! Feel free to add more pumpkin, coconut milk and/or broth until your desired consistency is reached. In a separate small pan, add the remaining 1/2 teaspoon coconut oil, cook 30 seconds then add the zucchini noodles and sauté 1 1/2 minutes. Dish up the zucchini noodles and pour the sauce over top. Garnish with a little extra fresh cilantro.
