Pumpkin Pie Bars

1/2 cup pumpkin puree
1/2 cup almond butter
1/3 cup raw, local honey or maple syrup
2 eggs or flax eggs (2 TBSP ground flax + 5 TBSP water)
2 tsp pumpkin pie spice
1 tsp vanilla extract
1/4 tsp sea salt
1/2 tsp baking soda
1 tsp cinnamon
1/2 cup walnuts or pecans, chopped

Preheat oven to 350 degrees and grease an 8x8 pan generously with coconut oil or ghee. Combine all of the ingredients in a medium bowl, and mix well until a smooth batter forms. Transfer the batter to the greased pan, and bake for 20 to 25 minutes, or until the edges are golden brown and the center is firm. Allow to cool completely in the pan. Top with 1/4 cup chopped pecans or walnuts. Cut and serve!
