Pumpkin Turkey Chili Pumpkin Turkey Chili

1 tbsp ghee
1/2 medium onion, diced
1/4 cup green bell pepper, diced
1/4 cup red bell pepper, diced
1 clove garlic, minced
1/2 lb ground turkey
2 cups kale or Swiss chard
1/2 14oz can diced tomatoes
1 cup canned pumpkin
3/4 tbsp chili powder
sea salt, to taste
black pepper, to taste
cilantro, chopped

Heat the oil in a large skillet over medium heat. Saute' the onion, bell peppers, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes, greens (kale, swiss chard), and pumpkin. Season with chili powder, salt, and pepper. Reduce heat to low, cover, and simmer 20 minutes. Top with cilantro and serve.
