Quinoa Veggie Soup

4 cups filtered water
1/4 cup quinoa, uncooked
1/2 cup carrot, diced
1/4 cup celery, diced
2 tbsp onion, diced
1/4 cup green bell pepper, diced
2 cloves garlic, chopped
1 tbsp coconut oil
1/2 cup tomatoes, diced
1/2 cup cabbage, shredded
1 tsp sea salt
2 tbsp parsley, chopped
1 can kidney or white beans, drained and rinsed

Saute' quinoa, carrots, celery, onions, green pepper, and garlic in coconut oil under tender. Add water, tomatoes, beans, and cabbage and bring to a boil. Simmer 20-30 minutes or until tender. Season to taste and garnish with parsley.
