Roasted Spaghetti Squash
1/2 medium spaghetti squash
Preheat oven to 400 degrees. Rinse and dry the spaghetti squash. Cut off the ends and slice in half length-wise. Use a fork to scrape out the seeds. Fill a baking dish with 1/2 inch of water. Place the spaghetti squash cut-side-down in the water. Bake for 40 minutes or until squash is fork tender. Remove from the oven. Place the squash cut-side-down on a double layer of paper towels and allow to drain. Use a fork to scrape the "spaghetti" and serve.
