Scrambled Eggs with Smoked Salmon

2 eggs, whisked
4 oz thinly sliced wild smoked salmon
1 tbsp ghee
1 tsp lemon juice
1 tsp capers
1/4 cup red onion, sliced
1 cup spinach

Melt ghee in a medium sauce pan over medium heat. Add eggs and scramble until desired consistency is reached, stirring often. Place the eggs on a plate and top with smoked salmon, lemon juice, capers, and red onion. Serve over fresh greens.
