Sesame Orange Chicken

1 lb boneless chicken thighs
1/4 cup coconut aminos
1 tbsp orange juice
1 tbsp tomato paste
1/2 tbsp toasted sesame oil
1 tsp garlic, minced
1/4 tsp ground ginger
1/4 tsp sea salt
1/4 tsp red pepper flakes
1/4 tsp black pepper
sesame seeds, for garnish
1/2 head cauliflower
1/4 cup green onions, chopped

Place the chicken in a single layer in the bottom of the crockpot. Place the remaining ingredients, except for the sesame seeds and cauliflower, in a bowl. Whisk together and pour over the chicken. Turn the chicken once to ensure an even coating. Cook the chicken on low for 4 hours. With one hour remaining, cut the cauliflower into florets and place in a food processor. Pulse until a rice-like consistency is formed. Drizzle with grapeseed oil and toss to combine. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper and spread the cauliflower rice into an even layer. Bake for 15 to 20 minutes or until cauliflower starts to brown. Remove and set aside. Remove the chicken from the sauce and cut into cubes. Transfer the sauce to a small pan and simmer over medium heat for 20 minutes, until reduced by half and thick. Toss the chicken in the sauce and serve with a sprinkle of sesame seeds and green onions.
