Shallot Vinaigrette

Gwyneth Paltrow's It's All Good Cookbook

1 tsp Dijon mustard
1 tsp grade B maple syrup or xylitol
1 tbsp white wine vinegar
3 tbsp extra virgin olive oil
1 tbsp finely diced shallot
sea salt, to taste
black pepper, to taste

Whisk together the mustard, xylitol or maple syrup, and white wine vinegar. While whisking, slowly pour in the olive oil until it's emulisified. Stir in the shallot. Season to taste with salt and pepper.
