Shaved Brussel Sprouts with Raisins and Pine Nuts

Ingredients
1 bag of organic Brussel Sprouts
1 tbsp. coconut oil
1 pinch tumeric
1 pinch salt and pepper
1/2 cup golden raisins
1/4 cup pine nuts
2 tbsp Daiya cheese

Directions
Take one bag of Brussels, cut the bottoms and use either a mandolin, food processor with the slicing blade (easiest and fastest) or a knife to shave them into thin pieces. Throw them in a deep pan with a tablespoon of coconut oil, salt, pepper and turmeric. Stir fry for only a few minutes till sprout shreds become soft. Mix in a half cup of golden raisins and a quarter cup of pine nuts. Sprinkle with Daiya cheese and enjoy!
