Spicy Sausage & Chicken Stew

1 lb chicken thighs
1/2 lb spicy sausage links, sliced
1 14.5oz can diced tomatoes
1 cup roasted red peppers, chopped
1 large zucchini, chopped
2 medium summer squash, chopped
1 large shallot, diced
3 cloves garlic, minced
1 tbsp oregano
1 tsp basil
1 tsp sea salt
1 tsp black pepper
2 handfuls spinach or kale

Place all ingredients (except spinach/kale) in crockpot and cook on low for 8 hours. Add greens during last 30 minutes of cooking.

4-5 Servings
