Sweet Potato and Black Bean Wraps Sweet Potato and Black Bean Wraps

1/2 can black beans, drained and rinsed
1/4 cup cilantro, chopped
1/4 cup onion, diced
1 clove garlic, minced
1/4 tsp cumin
1 large sweet potato, diced and boiled until tender
1 tbsp Sriracha sauce
1 tbsp extra virgin olive oil
1 tbsp raw, local honey
1/4 tsp sea salt
1/4 tsp black pepper
4 lettuce cups
1/2 cup guacamole
1/2 cup cabbage, shredded

Mix black beans, cilantro, onion, garlic, and cumin. Heat black bean mixture on the stovetop. Toss sweet potatoes with sriracha, olive oil, honey, salt and pepper. Spoon sweet potatoes and black beans into the lettuce cups. Top with guacamole and cabbage and serve.
